Tasting Note
An extraordinarily distinctive nose of fresh bayberries, summer strawberries and a hint of rose. On the palate a layered richness emerges, suggesting of mulberries, jujube, blackberries and dark chocolate nibs. Refined tannins with a lingering, long finish.

Altitude: 1480 metre
Varietal : Cabernet Sauvignon; Isabella
Alcohol Content: 13.5%
Service: Strongly recommend decant 30mins to 1 hour before service. Serve at 18°C - 21°C
Vinification
Hand-cut clusters into 16kg baskets, then manual selection of individual grapes. Fermentation at 22-24°C for 12-15 days. 2-3 months in stainless steel. Blend of up to 12 months on oak. Limited edition. Estate bottled.
Climate and Soil
Typically 8-22°C. Lows 4-5°C; highs 26-27°C. Humidity 60-85%. 11-13.5 hrs sun per day. 850mm rain per year. Harvest in July. Sandy soil; fine and coarse sand. Good drainage. High in mineral content, especially iron; soil has a dull red appearance. Weakly alkaline. Natural fertiliser added during winter.
